BREAKFAST MENU IDEAS

If you, like me, sometimes get bored with your usual repertoire, and need some fresh inspiration, the below contain meal ideas.  Some are very basic, but the main focus for these ideas are usually just regular, daily meals, not necessarily the fanciest or most unusual.  Some recipes are housed here, some are offsite, but all have been tried and liked. I try to focus on a) healthy-ish, b) not using too too many processed ingredients and c) things that can be made ahead and quickly prepared (what I call Slow Fast Food).

Right now they are arranged alphabetically below; you can click on the "Breakfast Categories" in order to search by category. I've tried to add categories for the major or unusual ingredients. Eventually I hope there will be enough that you can head over to the categories and click on the ingredient in case you need an idea for how to use up some extra ingredients.

Apple Maple Granola

 

Recipe here.  I make this recipe with extra dried apples to bulk it up for more quantity without quite as much guilt from the nuts and sugar.  Freezable.  Good with milk, soy milk or yogurt.

Dr. Weil's Healthier Banana Bread

 

Recipe from Dr. Weil here.  Freezable.  I make in mini-loaves, slice, freeze and then take out a few slices at a time (take out overnight to thaw for breakfast).  Here's my recommendation for making the bananas as ripe and tasty as possible. Because this recipe is lower-fat, it's very important for the bananas to be super flavorful.

Oat Bran w/Ligonberry Preserves & Optional Cheese

This doesn't require a recipe, just follow the instructions on the package of oat bran and throw on a little of the preserves.  

I like Bob's Red Mill oat bran.  Lingonberry preserves have a bit of the puckery tang of cranberries.  They can be found for cheaps at Ikea, or I've found the other brand at my grocery store.

While it's not time-consuming to make, you can combine the milk and the oat bran in a small pot and put it, covered, in the fridge at night so that your bleary morning self doesn't have to measure.

A little bit of cheese can add some additional protein to help your day start off well.
